Peppermint Ice Cream (raw, vegan)

Quick 2-ingredient ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time
Main ingredients: banana, mint

suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, and delicious "even so"

How 'bout a bowl of cool mint ice cream on a hot summer's day? 

Uh yeah, you've come to the right place my dear. 

This is one of my favourite nice creams - okay, all of them are kind of my favourite because i could eat them all day long, but this is really one of the best, along with my Matcha ice cream and plain Chocolate ice cream!



Ingredients

3 large ripe bananas, frozen
around 5 chopped fresh mint leaves OR a few drops pure peppermint extract (a little goes a long way!)
2 tsp agave syrup or preferred sweetener (optional)
a little bit of Vitamineral greens powder for colour (optional) - i'm using 3 small ground Spirulina pills

also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)


Instructions

Put frozen banana pieces into your blending machine and blend until creamy smooth. Now add mint, sweetener and for more green colour a bit of Vitamineral greens or Spirulina powder - you could also use a handful of fresh baby spinach instead, it won't taste spinach-y! Then blend again so everything is nicely mixed through. 

Garnish with a sprig of fresh mint, and enjoy whilst sitting in gleaming sunshine. But don't daydream too much - the ice cream will melt faster than you prefer :)
