Chocolate Mint Energy Balls (nut-free)

low-fat, nut-free energy balls



Normally, raw energy balls consist of two things: dried fruits (such as dates or raisins) and nuts (or seeds). They are very tasty, but unfortunately also very high in fat. So when I went for a little trip to my brother last week, I threw together this recipe for low-fat, nut-free and nonetheless delicious chocolate mint energy balls :) 

Energy Balls are an amazingly convenient and tasty way to nourish your body, satisfy your hunger and sustain your energy when you're on the go. And it only takes minutes to blitz a handful of ingredients to make this high-energy snack - perfect popped into a lunch box!


CHOCOLATE MINT ENERGY BALLS

Preparation time: 7 mins
Main ingredients: oats/buckwheat, cacao, mint
difficulty level: easy
makes: 8 - 10 energy balls
suitable for: vegan, lactose-free, gluten-free, nut-free, soy-free, raw food, low-fat

Ingredients

1/2 cup oats or buckwheat groats
1/2 cup soft pitted dates
1 tbsp cacao powder or carob powder, more or less
Pinch salt (optional)
small handful of mint leaves


Instructions

Place dates and oats or buckwheat groats in your food processor and process until it forms an even but still crumby mass (you could use oat or buckwheat flour instead - I just like mine with a bit of crunch). Add the remaining ingredients and process until it forms a dough you call roll into balls. If it's too dry, add another date or two and a tiny bit of water until it's the right consistency. Similarly, adjust the cacao and salt to taste. 

Shape mixture into golf ball-sized balls and put in the fridge to firm for 20 mins. Eat whenever you need a quick energy boost :)
