Crunchy Chocolate Granola

I love making my own granola and muesli and oatmeal, and I am always trying new recipes and flavour combinations. It's all so easy to make yourself and not only does it save you money, but homemade granola often tastes much better than the store-bought ones and when you make it yourself you know exactly what is in it.  

This chocolate granola is a little more on the indulgent side, given it contains real chocolate (shocker!), as well as maple syrup and nuts, but due to the lack of any additional refined sugar it is still healthier than conventional chocolate granola, not to mention super delicious, nutty and crunchy. Oh, and it clusters!! :)


DIY CHOCOLATE GRANOLA

makes: 2 cups
suitable for: vegan, lactose-free, gluten-free, soy-free, low-sodium
 
Ingredients

1 1/2 cups rolled oats (use gluten-free if intolerant to gluten!)
1/2 cup crushed almonds/walnuts/pecans/hazelnuts/cashews 
1 tbsp cacao powder
1 tbsp cacao nibs 
1 tsp pure nut butter
1/2 tsp sea salt
1 tsp ground cinnamon
4 tbsp pure maple syrup
1/2 tbsp blackstrap molasses (optional

1/4 cup chopped vegan dark chocolate (I used one with 70 % cacao)

Instructions

Preheat oven to 325°F / 160°C.

In a fairly large bowl, combine oats, nuts, cacao nibs, cacao powder, salt and cinnamon. Stir well. Then add the wet ingredients: nut butter, maple syrup and molasses. Stir until everything is well coated in the nut butter / syrup mixture. 

Spread the mixture onto a baking sheet lined with parchment and toast it in the oven for about 10 minutes. Stir carefully, and return to oven for another 10 minutes. 

Remove from oven and allow to cool completely. When the granola has cooled, you can mix in the chopped chocolate (otherwise it might just melt and burn in the oven). And you're done - easy!

I served the crunchy chocolate granola with soy yogurt, banana slices and fresh raspberries and a few basil leaves (I'm obsessed with pairing berries and herbs at the moment, haha).  

Store in an airtight container. (That is, if there's anything left of your granola.)
